Okay y'all, I'm stepping on over to the fruitcake fan club!
These were made last night and drenched in butter, sugar, and rum early this morning. (Heck, that would make ANYTHING taste good.)
But seriously- I have always *wanted* to like fruitcake. But I just didn't love the flavor of the candied fruit and the dry cake. I stumbled upon this recipe from King Author Flour last night. I changed things up just a bit...because after all, recipes are suggestions.
The difference between mine and the King Author version is -
I used dried cherries, peaches, and currants instead of the first three fruits listed.
For the batter, I used 1/4 cup of molasses instead of the golden syrup and I added a little extra ground clove and cocoa.
Finally, I made up a glaze of 1 cup sugar, 1 stick butter and 1/2 cup of dark rum.
Who says you HAVE to use those neon colored, candied fruits? Use what you like!
My husband, who is not a fruitcake eater deemed this one delicious!
